Just like all great things in life, our 12 Days of Christmas Cookies Rockette Winter Spectacular is coming to an end.
Tonight's final recipe is a cookie I've been saving for last, because like all great Christmas movies, this cookie has a little something for everyone. [insert Jingle All the Way quote here].
Peanut Butter Toffee Turtle Cookies.
I'll give you a minute to think that over.
Peanut Butter Toffee Turtle cookies are going to make you everyone's favorite when you show up with these. Covered in caramel and drizzled with chocolate, these bad boys look and I'm (safely) assuming, taste amazing. Here's the recipe.

Ingredients
1/2 cup unsalted butter
1/2 cup granulated sugar
1/2 cup firmly packed light brown sugar
2/3 cup creamy peanut butter
1 large egg
2 cups bisquick all purpose mix
2/3 cup almond toffee bits
2/3 cup coarsely chopped peanuts
2/3 cup milk chocolate chips
10 ounces of vanilla caramels
2 to 3 tablespoons whipping cream
1/2 teaspoon vanilla extract
2/3 cup milk chocolate chips for drizzle
Instructions
1. Preheat oven to 350. Beat first four ingredients at medium speed with an electric mixer until creamy. Add egg, beating until blended. Add bisquick and beat at low speed until just blended. Stir in toffee bits, chopped peanuts and 2/3 cup of chocolate chips.
2. Drop dough by rounded tablespoonfuls onto ungreased baking sheets. Flatten dough with hand.
3. Bake at 350 for 10 to 12 minutes or until golden brown. Cool cookies on baking sheets for one minute, move to wire racks.
4. Microwave caramels and 2 tablespoons cream in a glass bowl on high for one minute and stir. Continue to microwave at 30-second intervals, stirring until caramels melt and mixture is smooth. Add remaining cream if necessary. Stir in vanilla. Spoon caramel mixture evenly onto tops of cookies. Drizzle evenly with melted chocolate chips.
I am literally going straight into the kitchen to make these now.
So I hope you all enjoyed the 12 Days of Christmas Cookies from Yeah, I'd Bake That. It's been a roller coaster of a few days that's included a complete redesign of the website, and a whole lot of sugar. We've laughed, we've cried. It's been heart warming and heart wrenching at times. I've been to the grocery store 20+ times, but have always managed to forget one thing. Tis the season.
Sometime on Friday I'm going to post one entry that has a link to every recipe, that way you can forward it to your friends and tell them to study up for next year. Baking cookies is a young man's game, it's too easy to fall behind!
If you don't return, have a Happy Holiday and thanks for making me feel important for a few days! It was awesome :)
